Food by Fatma #4: Murtabak


So, this is the recipe that I have promised you!! The video is also up on my You 
Tube channel. So you can go watch me 'mencanai' in action!!

Dough

Ingredients: makes 6 murtabak dough

300 gm pizza or bread flour
135 ml water
40 ml condensed milk
half tablespoon melted butter/ghee
1/2 tsp salt
half of one beaten egg

Directions:
1. Mix wet ingredients together and give it a good whisk.
2. Using a paddle attachment on your mixer, mix the flour and the liqiud togther at speed 1 for 1 minute.
3. Let the dough rest for 20 minutes.
4. Change to a dough hook attachment, and knead at speed 2 for 10 minutes.
5. Dust the dough with flour and form a big smooth dough. Then, divide into 100g small dough.
6. Shape the ough into a round shape before oiling them. Make sure the bottom is smooth. 
7. Place in a muffin tin or a platter overnight.
8. The next day, fling or canai the dough on a well-oiled surface.
9. Place the flung dough on a fryer and pour the murtabak filling on the dough. Fold the corners to make a square shape.
10. Cook both sides until golden brown.


Filling

Ingredients: you can adjust the measurements according to what you want.

Chopped onions
Minced beef
Curry powder
Eggs

Directions:
1. Sweat the onion first iin oil. Then, mix in the beef and curry powder and cook it through. Season with salt and pepper.
2. When making a murtabak, spoon some of the beef for one murtbak and beat oone raw egg and mix with the beef. This will be the filling of your mutabak.


Pickled Onion

Ingredient:

Red Onion (finely sliced)
Vinegar
Warm water
Sugar

Directions: 
1. Dissolve the sugar well in warm water. Add some vinegar and then the onion. Make sure the onion is submerged. Taste to get the right flavour.
