Beautiful Food #1: Gluten Free, Nutrient Rich Savoury Pancake

Hands up if you struggle to eat and finish your oatmeal porridge like I do. Arrgh, I always try to make it tasting better everytime I made it and ended up always feeling that the taste could be better. Trying to eat healthier can be a struggle. I think it takes a while before you find healthier substitutes and helthier recipe that suit your appetite while nourishing your body with only the best food.
Since I will always choose savoury over sweet, this recipe was invented. A lightbulb moment later, it is put to the test. It is actually a healthier take on the Malaysian snack "cucur udang" or prawn fritters which is normally prepared with wheat flour and deep fried. In this recipe, I forgo the refined wheat flour with whole oats.
All you need (serves 2-3 person):
2 cups of oatmeal
about a cup of water or any liquid
On a low heat, cook the oatmeal in the liquid until all the liquids are absorbed and the oatmeal turns thicker in texture. Set aside.
Grated carrot
Garlic Chives (Kucai)
Spring onion (chopped)
half teaspoon of tumeric powder
An egg (optional)
Incorporate the oatmeal with the above ingredients. Mix it well.
Now you are ready to cook it. It is good if you could use a non-stick pan for this. Too much oil will break the oat dough. Into the pan, heat up one teaspoon of oil. Place your mixture in the pan and cook them on both sides until golden brown.
Serve with sweet chili sauce and enjoy!!
Now, before you ask, it does taste like the conventional cucur udang however, the texture is not the same because of the lack of gluten in it. If you like you can also add a little bit of flour.
